Manual harvest in small boxes of 20 kg, Fermentation with grape skins and indigenous yeasts, without temperature control, adding sulfur only at the end of fermentation. Addition of 5 different "hops" in different barrels. Unfiltered wine. 6 months aging in used barrels.
