Organic, Natural Wine, The grapes are harvested by hand. Destemmed and allowed to macerate for five days. Spontaneous fermentation takes place for 3 weeks in stainless steel and old oak casks (650L) with temperature control. Malolactic: Completed Spontaneously. The wine spends six months aging in the same casks. No stabilization or filters used. A wine from the winemakers of Luis Pato´s 2nd daughter: Maria Pato
