The Rufia wine by João Taveres and Pina, is a daring and fragrant wine, not very consensual, but it is a more serious wine than one can imagine.
Airy and lightly aromatic orange wine from the Dão, lots of structure but highly digestible. Aromas ranging from white flowers, mandarin and apricot to tea leaves and wet earth. Pronounced salinity lingers nicely.
Young vine Encruzado, Cerceal Branco, Bical, and Síria grown on granite and shale clay soils. No-till organic farming, reliance on biodiversity for balance and health of the vineyard. Hand-harvest and destemming, 3-week skin-maceration and natural fermentation in tank, followed by malolactic and 9 months aging on lees. Bottled unfiltered with a minuscule touch of added sulfites.
